Active Ingredients

  • 1 cup raw French green lentils
  • 1/2 cup raw green or brown lentils
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons plus 1 1/2 teaspoons red white wine vinegar, or to taste
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons Dijon mustard
  • 1 1/2 teaspoons pure maple syrup
  • 1 teaspoon great sea salt, or to taste
  • 1/4 teaspoon newly ground black pepper
  • 1 to 1 1/2 cups(* )very finely sliced green onions, about 1 medium lot, dark and light green parts just 1/3
  • cup fresh parsley leaves, minced 1/2
  • cup oil-packed sun-dried tomatoes, drained pipes and carefully sliced Guidelines

Choose over the French and green/brown lentils, disposing of any particles. Wash and drain pipes the lentils and put them in a medium pan in addition to 4 cups (1 L) of water.
