Active Ingredients

Corn Ceviche Salsa

  • 2 cobs corn, kernels eliminated
  • 1/3 cup lime juice

  • 1 loaded cup blended raw nuts and seeds ( I utilized walnuts, almonds + sunflower seeds)
  • sea salt and ground black pepper, to taste
  • 1 tablespoon taco spices
  • 1 teaspoon avocado oil
  • 1 teaspoon coconut aminos


  • 1 little cabbage, leaves eliminated and cut into “shells”
  • 6-8 chard or romaine leaves, cut into palm-size pieces
  • 1 ripe avocado, peeled, pitted and sliced
  • lime wedges
  • additional taco spices
  • additional sliced cilantro


  • Make the corn salsa: in a medium bowl, integrate the corn kernels, lime juice, salt + pepper and red onion. Toss to integrate. Let this sit for a while, about 15 minutes, stirring occasionally. Include the tomatoes and cilantro and stir to integrate. Examine the mix for spices and reserved.
  • Make the cashew sour cream: drain pipes the cashews and position them in a mixer pitcher. Include all of the other active ingredients and mix on high till a smooth paste is attained.
