2 tsp ground cinnamon
1/4 tsp ground nutmeg
pinch of salt
2 tablespoon maple syrup + more for serving
1 tablespoon melted coconut oil + more for cooking pancakes
2 cups carefully grated, loosely jam-packed carrots
handful of toasted walnuts, sliced

Make the cashew cream: Integrate the cashews, water, lime juice, vanilla and lime juice in a mixer or food mill and blend/process on high up until smooth. Scrape cream into a container and cool up until prepared to serve (it will tighten a bit).

      Hi There Peach, I’m uncertain how well that replacement would work. Coconut flour tends to be incredibly drying and almond flour makes items extremely damp. If I were to attempt anything, I ‘d do a complete cup of almond flour and a 1/4 cup of coconut flour– potentially even less. The liquids/carrot quantity in this dish may need to be adapted to accommodate such a modification too. You can attempt having fun with it if you like, however I’m not positive on the workability with this one.
